Awesome class with great results.
Elias did an awesome class on making mole. Starts with shopping for our ingredients and then making mole from scratch. It was a lot of fun work and best of all was eating our labors and plenty of mole to take home. One of the best things we did while in Puerto Vallarta

A Can’t Miss Experience
If you are an American who loves mole this is an immersive can’t miss experience. Our instructor Mouan was patient, kind, and hilarious, and took us through every step. Definitely do not want to miss the Choco museo. Btw—try some free samples!!!

Up to Our Elbows in Mole!

ChocoMuseo has several interesting classes but we wanted to try something more challenging than simply making chocolate. So we signed up for their Mole Poblano class: three hours of chopping, roasting, frying, grinding and then finally eating! It was fantastic!

Mole Problano is a very complicated sauce to make. There are 25 ingredients, all of which need to be mixed, chopped, fried, roasted or ground and then ultimately, all mixed together in the correct sequence. Our chef, Eric, spoke perfect english and took us through the process step-by-step, which started with a trip to the Old Town market to buy all the ingredients from five different shops. Quite a scene!

Then the work began. Fortunately, our group of three (the only ones in the course that day, which is capped at five attendees anyway) acted as a team and simultaneously worked on different parts of the recipe. It was great fun as all these ingredients came together to form the mole paste, which you then dilute with chicken stock to the sauce consistency you desire.

The capper of course is to sit down and enjoy lunch, which in this case was chicken (that we made the stock from) in mole sauce, along with rice and vegetables (which we also prepared), and hibiscus water (which Eric made from hibiscus flowers he found at the market). It was delicious!

At the end of the class, Eric gave us each a jar of mole paste from the batch we'd made. We'd received the recipe at the beginning in order to make notes. You are also entitled to a 10% discount in the chocolate shop downstairs from the kitchen. The facility was well-equipped with a beautiful view out to the Pacific Ocean. Overall a great cooking experience!

We had a wonderful time learning how to make Mole Poblano. Class was small, turned out to be just my son and myself. We first went to a Mexican market area to shop for our ingredients. We had a very fresh tortilla (still warm!) from a shop that made them. Back to the shop to make the Mole. 25 ingredients and many steps later we sat down to a delicious dinner, chicken with mole poblano sauce, rice with diced carrots, and tortillas with a hibiscus drink. Very delicious and we got to each take a jar of sauce and recipe home with us. We also learned all about chocolate. For a great learning experience we recommend this class.

So Fun! And best mole ever!

My husband and I took the mole workshop - it was truly a highlight of our PV vacation! Chef Angel was friendly, funny, knowledgeable and low-key, divvying up our "assignments" and making sure everything went right. Our other class member was one of the Museo staff (I wish I could remember his name! except it started with "A") who was in training to lead the mole class. He was really fun too, and anyone who is in his class will have a blast like we did. Loved that we started by going to the local markets, and the tortilla shop, to gather ingredients before returning to cook. Even ground our own cocoa beans into chocolate! I just can't say enough about how much we enjoyed this experience, from shopping to cooking to the delicious lunch at the end. And we came home with the best mole ever! Highly recommended!

Fun, Informative and Delicious

This is a great overall experience that not too many tourists have discovered which makes the experience more intimate and interesting. We learned that gathering the raw materials for chocolate takes months and is a difficult process. After that we learned how to make the edible chocolate and were guided in making some of our own. The entire experience was well worth it! I am happy to give it a strong recommendation.

it was just three of us but we had a gas. Despite high heat and humidity, we went to market, purchased the ingredients, worked like demons to get everything together and finished with an amazing lunch. Angel, our chef du jour,was friendly, engaging, professional and a delight. Bringing extra home was an added bonus. We loved the entire experience.

Mole Poblano Workshop Cancelled

We were scheduled for the Make Your Own Mole Poblano workshop. Just before we left, I received an email stating the workshop chef had missed his plane, and he would not be available for the week we were in Puerto Vallarta. Since we were only there for one week, we could not reschedule. It seemed odd that he missed one flight and could not get another for over a week. They offered to put us in the chocolate making class, but we were not interested in that class. However, they quickly refunded my money.

Great chocolate and great tour

This place was great, we Learned about the Cocoa bean, And how chocolate is produced, And that white chocolate is really white chocolate. It was very informative and we were able to make our own chocolate molds and bring it home to eat. It made us felt like little kids in a candy store. There are a lot of souvenirs and things to buy to take-home if you choose.

Fabulous Mole Poblano Class
We took Angel’s mole poblano cooking class and absolutely loved it. We enjoyed everything from the trip to pick up the ingredients at the market, to the intensive preparation, to of course the eating part. Angel was a great instructor and made the entire experience a blast. Highly recommended!
